These cookies are made for my girls (18 months and 2.5yo). I’m very very particular about what they consume. No junk, no canned food, no processed food, no soda, no candies or refined sugar. I’m proud to say that my girls have not eaten hot dogs, ham, luncheon meat etc… No, I’m not a health freak, but studies have shown how bad those food are. And I’m a SAHM (for now) so I believe that there is no reason to take short cuts when it comes to taking care of my babies. That being said, they have had cake when they go to birthday parties, fried food when we eat out (restaurant should really try to have a decent kid menu!), and the occasional chips at parties/get together. But that doesn’t mean they can’t have comfort food, we just have to modify it. Fruit smoothies instead of milk shakes, frozen yogurt instead of ice cream, homemade muffins and cookies, instead of store bought. They have their whole adult life to decide if they want to consume junk food, so there is no need to make them do it now. That’s my thinking, and I’m not trying to impose that on anybody, or judge anybody. 🙂
Back to the cookies… I used honey instead of sugar, so do not expect it to be as sweet as the normal cookies. And because avocado was used to substitute sugar, the cookies turned out a cakey texture when done, which is normal. The avocado gave the cookies a little greenish tinge, feel free to add cocoa powder to make it chocolatety and hides the colour too! If you are worried about giving your young child honey, replace it with maple syrup. But honey is safe in this case, as it is cooked in high temp. No Nestum? Replace with quick cooking oats.
Ingredients (Makes about 15 cookies)
- 125g riped avocado (about 1 med size avocado)
- 1/2 cup honey
- 1/4 tsp salt
- 1.5 cup all purpose flour
- 1/4 cup milk powder
- 1/2 tsp baking soda
- 1 tsp vanilla extract
- 1 cup nestum
- 1 egg
Preheat oven to 175*C
Sift baking soda, milk powder, flour, and salt together.
Beat avocado until creamy
Add honey and vanilla extract.
Add egg and mix well.
Pour in flour gradually while mixer on low.
Fold in Nestum cereal.
On lined cookie sheet, drop about 1 tbsp ( I probably did about 1 heaping tbsp) of dough about 2 inches apart.
Press down with a spoon. The cookies doesn’t spread, I’ve learned.
Bake for 12-15 mins or when sides of cookies starts to brown.
Let cookies cool on the cookie sheet for 5 mins before transferring to wire rack to cool completely.
