Breakfast Scrambled Eggs & Spinach on Portobello Bun – Delishar

Breakfast is the most important meal of the day. I’m sure you have heard that multiple times in your life. To me, breakfast is the meal that I look forward to the most. It is also one of the toughest meal to plan, imo. That’s because it needs to be speedy, nutritious, delicious, and visually appealing. Got to start the day right, am I right? 😀 Here I have a Whole30, Keto, Paleo, and GF compliant breakfast recipe for you.

You can prep the mushroom the night before in order to save some time. However, removing the gills is pretty quick and easy. Just use a spoon to scrape it all out. You can use another heavy pan to press down on the portobello when cooking it on the pan, which helps it cook more evenly. Sprinkle with a touch of smoked paprika or smoked chilli powder for an added depth of flavour.

Scrambled eggs and Spinach on Portobello Bun

Prep Time 5 minutes

Cook Time 15 minutes

  • 2 large portabello mushrooms
  • 4 eggs beaten
  • 100 g spinach
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • 3 tbsp olive oil
  • Salt and black pepper to taste
  • Pinch of smoked paprika
  • Remove the stem of the Portobello mushroom. Use a spoon to scrape off the gills, and discard.

  • Brush on olive oil onto the top and bottom of the Portobello, season both sides with salt and black pepper.

  • Heat pan on medium-high heat, and cook Portobello mushroom for 3 minutes on each side until tender.

  • Wipe pan, and add 2 tsp olive oil over medium heat.

  • Add spinach, season with garlic powder, onion powder, salt and pepper, and saute until just wilted.

  • Add another 2 tsp of olive oil and add in eggs.

  • Stir continuously until curdled, season with salt and pepper.

  • Remove from heat when eggs are almost set.

  • Serve over spinach and Portobello mushroom.

Umi Japanese Party Platter – Delishar

There are times when we have get-togethers or kids’ parties and I can’t think of what to put together. By putting together, I mean something quick, easy, and a crowd favourite. Thankfully there are these convenient Umi Japanese premium snacks, made with ingredients such as Alaska pollock. I used it to put together this Japanese party platter with Seaweed Wasabi Mayo dip. These frozen packets of goodies are a lifesaver, I use them in hotpots and oden too.

The Umi crabsticks and Edamame Fish Balls are made with premium Alaska Pollock Fish. The crabsticks are also ready-to-eat once it is thawed, which means one less thing to prep or cook! Shred the crabstick over salad, mix it with some mayo, sear it to serve with pasta, the possibilities are endless! The larger 100cm Chikuwa makes it so much more fun to eat. You can literally see chunks of squid in the Ika Ball. The Yakitori Balls hit the home run with the family. It was made with beautifully seasoned real meat.

Umi Japanese Party Platter

Prep Time 5 minutes

Cook Time 15 minutes

  • Umi Crab Sticks 125gm thawed
  • Umi Yakitori Ball
  • Umi Ika Ball
  • Umi Chikuwa large 10cm
  • Umi Edamame Fish Ball
  • Oil for deep frying

Dip

  • 5 tbsp mayonnaise
  • 1 tbsp wasabi or to taste
  • 1 tsp Aonori Seaweed flakes
  • Slice thawed crabstick on the bias and place it on the platter

  • Bring a pot of water to boil.

  • Boil frozen yakitori ball, ika ball, chikuwa, and edamame ball for 10 minutes.

  • Drain on paper towel.

  • Bring oil for deep frying to 170*C.

  • Deep fry boiled items until it starts to turn golden brown.

  • Drain on paper towel to absorb excess oil, then transfer to platter.

Corned Beef Hash II – Delishar

I have a soft spot for corned beef hash. It’s a recipe that makes me smile and lets me know that the day is going to be a great one. I’ve shared a corned beef hash recipe eons ago. That has a crispier and dense texture while this is a little more separated. I wanna say fluffy, but I don’t think that’s the right word to describe it. Haha! If you are a corned beef lover, you are going to love this recipe.

The brand of corned beef you use makes a big difference. Libby’s corned beef appears more broken or minced. Which is better for a flatter crispy edge dish. For hash like this, I’d prefer using Palm corned beef as you can see, the meat remains chunky, unlike Libby’s. If you have any other brands to recommend, please let me know!

Corned Beef Hash II

Prep Time 10 minutes

Cook Time 20 minutes

  • 1 can corn beef Palm Corned Beef
  • 1/2 med yellow onion diced
  • 2 large potatoes diced about a 1x1cm
  • 1/2 red pepper diced
  • 2 tbsp chopped parsley
  • 3 tbsp cooking oil
  • Salt and black pepper to taste
  • 4 eggs
  • Heat oil in pan over medium-high heat.

  • Saute onion and potatoes until brown on the edges.

  • Add red pepper and corned beef.

  • Season with salt and black pepper.

  • Cook for 5 minutes.

  • Remove from heat and toss in parsley.

  • Set aside on a plate.

  • In the same pan, fry sunny side up eggs.

  • Serve over corned beef hash.

Substitute potato for sweet potato.
Keto: Use zucchini instead of potato

Lime Cilantro Salmon – Delishar

A quick 15 minutes Lime Cilantro Salmon recipe to whet your appetite! Moreover, the sauce makes a great dressing for salads. You can toss it with your pasta or serve the salmon over any carb of your choice. I had mine with cauliflower rice while the family had theirs with couscous. Served with a side of grilled white asparagus, sauteed sweet peppers, and mashed avocado. This recipe is a versatile one that can be modified to fit your dietary needs. I’ve included a Keto and Whole30 modification in the recipe card.

By now you’d know that I’m a big fan of The Alaska Guys (TAG). They bring in only the finest wild-caught Alaskan seafood. From the different kinds of salmon, white fish like cod, halibut, and pollock, to the meatiest sweet Alaskan King Crab. They also carry delicious sausages, beef, and non-Alaskan products. Seriously, if you have not tried wild-caught Alaskan salmon, please do yourself a favour and try it. You no longer have to deal with the nasty fishy smell on your hands and in your kitchen. You’d taste the difference, this I promise you.

TAG recently released a new product on their website. It is a 500g pack of skinless and boneless sockeye salmon, individually portioned and vacuum packed. It’s going at $25.50/500g pack. A steal as compared to the regular 160-220g sockeye portions at $68/kg. This is also a great option for family with young kids with a smaller appetite who prefers not to have fish skin on their fillet. Great for cooking soup and congee. My girls aren’t big on salmon skin, so yay for no wastage! Each individual portion size was also perfect for my family of 4, plus my helper. 🙂

Lime Cilantro Salmon

This recipe is paleo-friendly. Keto and Whole30 modification below.

Prep Time 5 minutes

Cook Time 10 minutes

  • 1 pack TAG Alaskan Sockeye (Red) Salmon Skinless Boneless 500g
  • 2 lime Juiced
  • 2 cloves garlic minced
  • 1/4 cup cilantro chopped and divided
  • 1/4 cup butter
  • 1/3 cup stock chicken or veg is fine
  • 3 tbsp maple syrup or honey
  • salt and black pepper to taste
  • 1/2 tsp red chilli flakes optional
  • 2 tbsp olive oil
  • Thaw salmon and pat dry

  • Season salmon with salt and black pepper

  • Heat pan on medium high with olive oil until shimmering

  • Add salmon, and lower heat to medium-low

  • Cook 2 minutes each side, then remove to plate

  • In the same pan, add butter, chili flakes and garlic to cook until fragrant

  • Then add stock, lime juice, maple syrup, and cilantro

  • Allow to simmer and reduce

  • Pour over cooked salmon and garnish with reserved fresh cilantro

Keto – Skip the maple syrup
Whole30 – Substitute maple syrup with date paste

Fotona 5D Laser Facelift – Delishar

In October, I celebrated the last year of my 30s. That same month, we also moved to a rental place while we wait for our new condo to build. I swear the stress of the move must have expedited the aging process. As a birthday and moving treat, I turned to science for a non-surgical Fotona 5D laser facelift.

During my regular Botox treatment with Dr Chua, I asked him about my sagging skin. My nasolabial lines or laugh lines have been bothering me quite a bit. That was a clear sign of my skin losing the firming as it heads south. I didn’t want a quick-fix targetted solution like fillers. I wanted a treatment that can target overall skin laxity to provide an overall lift. He recommended Fotona 5D, a 5-step non-invasive laser facelift using 5 different lasers.

Since this is something new I’m trying and a pretty interesting procedure, I thought I’ll do a review to share it with all of you. Especially since the clinic, I frequented for the past few years pioneered the Fotona 5D procedure and is the only clinic that does it. The doctors at SL Aesthetic Clinic developed the 5D treatment in 2020 after extensive research and development. Commonly, what you’d find in the market is Fotona 4D.

The Fotona4D Laser is performed using 4 different unique laser modes: SmoothLiftin™, FRAC3®, PIANO® and SupErficial™. The Fotona5D Laser is developed by SL Aesthetic Clinic and adds on a SmoothFirming step for additional skin firming and tightening.” ~SL Aesthetic Clinic.

I’m not going to bore you with the sciences, if you are interested, please click here to read more in-depth about it. However, I’m going to summarize the benefits of the treatment:

I mean, can you tell why I was sold?! One treatment, so many benefits, 60-90 minutes once to twice a year, and only 4-6 weeks to see results! What a time and money saver. Traditional laser treatments are about 20 minutes with multiple visits a year. Dr. Chua shared with me that the clinic invested in additional handpieces that maximize the efficacy and safety of the treatment. The additional handpieces allowed for a larger more uniform area of treatment and monitors real-time skin temperature to optimize treatment and prevent overheating of the skin.

The treatment was comfortable, my face was cleansed and numbed before the treatment. It helps when the therapist was blowing cool air while Dr. Chua was using the 2nd laser. The sensation is very bearable, much more than Hifu and Ultherapy. I’d rate it a 1.5 out of 10. It gets a little more uncomfortable at the part where treatment is done on my inner cheeks through the mouth. That was a little more sensitive but still bearable.

After the treatment, my face was taut and rosy. The downtime was minimal, the first day after the numbing cream wears off, my face feels warms. The next day, it was rosy, dry, and feels like sunburn. From the 3rd day onwards, things went back to normal with very minimal peeling.

Overall, I’m very pleased with the result. My skin is brighter, tighter, and lifted. My skin tone has evened out and my complexion definitely looks a lot brighter. Can you tell that my droopy eyelids have been lifted as well? I guess the treatment around the hairline and neck works and lifted my forehead and eyebrows to help with the appearance of my droopy lids.

One thing for sure, my saggynasolabial lines have been improved too. It is less obvious now compared to before treatment. Urge, I hate aging, but I’m so thankful for aesthetic treatments!

Crab Bites with Thai Seafood Sauce – Delishar

Oh hey hi! I’m back with another video and a super easy recipe to whet your appetite. This time, it’s a no-cook recipe that requires very little preparation. As a busy working mom, I often look to create quick and delicious recipes for snacks or mini get-togethers. With the group size capped to 5/household at any one time, these bite-sized hors d’oeuvres are perfect for entertaining. I brought it to a family gathering for taste testing and it was 3 generations approved!

Using DoDo‘s crab chunks, I don’t even have to peel the plastic wrapping off or slice the crabsticks. Just remove it from the package and it’s ready to be devoured. What I love most about these affordable DoDo crab chunks are the 90g package size and the $1.70 price. It’s the perfect size for 1-2 pax. It’s also the perfect amount to use for your stir-fries, personal hotpot, pasta, and more…

For this recipe, I was inspired by little tapas with Thai flavours infused into them. The sauce made is also known as Nam Jim Talay, a popular Thai seafood dipping sauce. The mayonnaise on the vessel adds depth with its creaminess to bring all the fresh herby flavours together. It also balances out the spiciness of the sauce while the sweetness of the crab chunks marries the tanginess of the sauce beautifully. If you’d like to see more recipes like that, let me know. 🙂

Crab Bites with Thai Seafood Sauce

  • 3 packs Dodo Crab Chunks
  • 1 cucumber shredded & liquid squeezed out
  • Crispy toasts or crispy baguette See notes for alternatives
  • Mayonnaise
  • Chives to garnish

Dressing:

  • 1 clove garlic
  • 1 chilli padi or to taste
  • 1 shallot
  • 50 g coriander roots included
  • 3 tbsp fish sauce
  • 4 tbsp sugar
  • 4 tbsp fresh lime juice
  • ½ tsp salt
  • Method:

  • Add everything for dressing into the blender and blend.

  • Pour enough dressing over crab chunks and toss to coat.

  • Spread some mayo over the crispy toasts.

  • Top with shredded cucumber and add crab chunks.

  • Garnish with chives and serve.

You may also use pie tie cups, ritz crackers, rice crackers, wafer/crackers, tostitos scoops etc.

Dodo Chicken Platter with Salted Egg Yolk Dip – Delishar

Crispy & crunchy battered succulent fried boneless chicken with a rich decadent silky 5-ingredient salted egg yolk sauce to pair. This chicken platter combo is a match made in heaven. Using Dodo’s new chicken series saves me the time and mess from having to marinate and batter the chicken myself! You can oven bake, air-fry, or fry it frozen as I did. Yes, no need to thaw it out. How convenient is that?! Great for last-minute parties, when you have the munchies, or when you just do not know what to make for dinner. I’ve made Japanese Chicken Katsu Curry Don, Crispy Chicken Salad, ‘Zinger’ Burger, and Chicken Katsu Don with it so far.

My favourite is the Mala Chicken Patty. That was a flavour bomb, just like what a good bowl of mala should be. It’s not subtle, nor is it overwhelming. If you are a mala lover, you’ll find it difficult to keep your hands off this one! The Chicken Cutlet uses chicken leg meat which makes it juicer, great for burgers. My youngest, the fried chicken lover, can’t stop eating the Chicken Patty and Chicken Cutlet. That little girl ate 3 pieces at dinner and was reaching for her 4th when I had to stop her from over-eating.

  • DoDo Chicken Patty In Batter 4 pcs
  • DoDo Chicken Cutlet Leg 4 pcs
  • DoDo Chicken Patty Mala In Batter 4 pcs
  • Oil for deep frying

Salted Egg Yolk Sauce

  • 5 Salted egg yolk mashed *see notes
  • 60 g butter
  • 120 ml evaporated milk
  • 3 tsp sugar
  • 1 tsp fish sauce

Garnish (optional)

  • Shredded spring onion
  • Sliced red chilli

Salted Egg Yolk Sauce

  • Heat a pan on medium heat to melt butter.

  • Add salted egg yolk to cook until bubbly.

  • (Salted egg yolk was steamed for 15-20 minutes then mashed)

  • Add fish sauce and sugar. Give it a quick mix.

  • Pour in evaporated milk, bring to boil, and remove from heat immediately.

  • Pour into the blender to blend until thick and smooth.

  • Garnish platter & serve with dipping sauce.

Oven bake: 200C for 20 Minutes
Salted egg yolk: steam for 20 minutes on high or microwave on high for 1-2 minutes
